Week 1
Get to know you and Induction
Health and safety / fire alarm / kitchen layout / Toilet location / PPE knife glove safety shoes / first aid / basic knife skills- ie sharpening – holding- finger placement / different chopping board colour for different food- / sterilising of chopping board / food safety / cross contamination / food waste
Week 2
Butchering
Chicken – butchering whole chickens showcasing how to get 4 dishes from one chicken, more knife skills / prepping vegetables for a stir fry- layering of flavours again.
Weighing out ingredients to make a finishing sauce.
Cooking the chicken and vegetables.
Finishing with complex flavours to create all 5 senses
Week 3
Bread and Baking
soda bread and Focaccia bread
weighing out ingredients- folding and needing- cooking of bread.
Chocolate Brownie
Week 4
The five French mother sauces
The five French mother sauces are béchamel, velouté, espagnole, hollandaise, and tomato.
Base sauces to use on a variety of dishes and great for using up items to make new dishes.
From this class you will make Mac n Cheese / Pasta bake / chicken pot pie
